we have dates!  i'll say one thing.  rosie is organized!

guys on the trip coming up have first crack.  that's seven spots.  numbers 8 through 12 are up for grabs as of right now.  post if you want in!  details to follow!

Alan,
I'm a friend of Ed's.  I love fishing both long range and Cedros and would like to go with your group.  If there is room, i would like to come on your trip.
To the gentleman who is bringing 2 oz sinkers for his bait rigs, I just returned from Cedros.  Bait was plentiful mackerel, both small and large.  My friend who was trying to use 2-4 oz sinkers had his bait rigs screwed up by the larger bait.  I used 8 oz sinkers with no problems.  Yellowtail bite was early and lasted about 2 hours.  Faster you went south to the grounds, the more 25-35lbs yellows you caught.

Steve, looked like the same species, just different sizes depending on where we were catching them.  Also there were some sardines in the mix.  Definitely, did better with the bigger mackerel on our trip.  Also used them for some dropper loop fishing.  Some of our guys wanted to catch big sheepsheads and grouper.

i already spoke to rosie about having 6 boats and only two per boat.  i also want the fish gutted, gilled and slushed on board.  not sure if slush is possible.  i know they will have no problem getting salt........   ;D

The slush is something I was concerned about. It is a shame to have the fish processed at such a high level when they weren't cooled down correctly in the first place. The boats aren't really set up for it, but it is something Rosie will have to figure out if the goal is to advance to the next level.

At least they put them on ice unlike some other pangas I have fished on. Would kill bags with ice work after bled, gilled and gutted? The hold works good for bleeding and initial cooling. I had some YT last night and it was good. I agree that the fish care could be taken up a notch. They will also have the AC unit hooked up in the fish room which will keep the processing area cool and Rosie mentioned that they will be putting in blast freezers in the future.

I actually think the holds would work if they hold water, it would just be a PAIN to clean. Once they were cooled down in a salt slurry I think kill bags would be fine. They would probably be fine just staying in the hold as long as there was room to bleed and cool down. Gutting and gilling is the big one, that way the inner cavity has access to the cooling effect.

They also need better insulated bags to transport the fish to CBX. Some of the fish packs were already soft as we were distributing them. Only about 4 hours after bagging them at Cedros. Everyone was nice enough to give me fish that was still frozen for my trip to GA. And Ron took his to 5 Star for a flash freeze. My fish made it home still in good shape.

Like the Canook mentioned above. The big issue with the fish is freezing facilities on sight. The chest freezers they have now are inadequate. Rosie says they have a plan to fix that this year, she was also interested in the insulated bags Alan used. I had my fish out of 5 Star for 11 hours or so and they weren't rock hard when I left. The bags kept them cold until I got them in the freezer, still in good shape.

The operation is growing, and I think they have a path to rectify this issue. That's a good thing, I intend to continue being a costumer for years.

A friend just came back from a Cedros fly-in trip and he got a couple of wahoo and a personal best 45lb yellowtail!

Just wanted to add that I keep a kill bag at Cedros  and used it the last 2 years.  Kept the fish icy cold after bleeding.  So much better than using the boat's forward compartment and ice.
I leave a tackle box and the kill bag to use every years and just bring a few rods and my reels.  Look forward to fishing with you'll in the future.

I put in my vacation request on Friday. One of the things my new boss and I talked about is that I'm good with unpaid time off. He politely pointed out that he, in fact, needs an employee. I think I may need a new job come the end of October ext year!

ok, now for the breakdown.  we are tentatively fishing two people per panga, not three, and fishing a half day when we arrive, which is why the cost is an extra $255 higher.  the price per person is normally $2350, but we get one free charter master spot which i am throwing into the pot.  instead of $28,200, the 12 of us will ride for $25,850.  two extra pangas for the regularly scheduled 3 days of fishing will be an extra $2160, then add an extra half day of fishing on the day that we arrive at $900 for the six pangas gives us a grand total of $28,910, or just a shade under $2410 per person. 

lastly, welcome to the four new guys - steve, jack, ed and rich k.  for the new guys, take a look at the report from last year. we will be talking about tips and requested changes in fish handling, plus any other requests that you have, in a later email. i will also be confirming personal/passport info later.  for now, please get those checks out as soon as possible.  thanks!  alan

the dates for our 8 day trip are october 15-23, 2019.  no deposits needed until april.  chief, you got your suitcase, right?  i shipped it back a month ago.

Todd, I've been meaning to mention my favorite use of last year's yellowtail. While marinated in vinaigrette and lightly bbq'ed was fantastic, my favorite is smoked and then flaked and mixed with mayo, chopped onions, and chopped celery...served like a tuna sandwich. It's delicious smoked, but a little dry. This adds moisture back while keeping that smoky flavor.  Would go perfectly with a few of those Tecates this way!

One of the keys to good smoked YT IMO is to keep the skin on. There is a thin fat layer between the skin and meat which will keep the fish moister.

Edit to Brine Mix
Sorry for the mixup I just checked my notes for the brine.
In a blender 1/2 cup Kosher salt blend to almost powder
1 lb brown sugar blend well together with salt
Fill the blender full with water and mix for several minutes more
Depending on how much fish you smoke you may need to do the above twice or more
Pour mixture over fish in a large pan or pot, I use a large pot I use for canning
Stir fish every 3 or so hours to make sure the bring penetrates evenly
Let sit in the frig 8-10 hours or longer, I do this over night.
Take fish out of the brine and rinse with fresh cool water.
Here if you want is the time to add seasons like chili flakes, garlic powder, lemon, lime or orange on the meat side.
Key #2 place fish on a rack skin side down and let fish dry until opaque. No wet or shiny parts on the fillets. I use a fan to speed up the drying process and it keeps flies off of the fish.
Key #3 use a more mild smoke, I like Alder wood. IMO Marquisette or Hickory is too strong but each his own here. 2-3 pans of wood only, depending if you go with chunks or the more sawdust type styles of smoking wood.
Key #4 low and slow. Low temps and hours works best. I smoke my fish for about 4-6 hours depending on the fillets thickness. For me to test when it is time for the fish to come out of the smoker I bend a fillet and when it breaks slowly the fish is done. If it cracks open quickly IMO the fish is over cooked, not bad but more like fish jerky once it cools and dryer to the mouth. This part is a learning process so play with the texture and flavor how you like.
Now if your going to bag the smoked fish or seal it up and freeze it put the fillets into the frig uncovered until they cool fully. I should of added I let the smoked fish come to room temp before it goes into the frig. If you bag it sooner you most likely will get condensation in the bag and when you bring the fish room temp still in the bag it will be a bit slimy. You could let it air dry until the dampness goes away from the fillets but this takes time so if you wait a while until the fish is fully chilled you won't have the the slimy issue and a much better product.

Just like anything else this will take time to prefect, so if you want to impress your friends do a few batches until you have it fully dialed in. I have been doing this maybe 25 years and every once in a while I will have a batch that I won't share with others do them not being up to my standards, so never let the word out you have smoked fish until it passes what you think is good.

Edit: And there is no reason it go with a high tech smoker. These pics were taken several years ago and the inside is now much darker with a deep brown patina.

Deep drop with bait so dropper loop or not (I used a slider BC style). Mook and I did some drops one afternoon and did great: YT, pinto bass and calico. There has to be grouper spots around as Chevo showed us pictures with him and a commercial panga guy with some big ones. Did not try heavy yoyo irons at the same spot.

Sorry Dom I never saw this until now.

That vent looking thing at the top is how the cooling system worked, it is not a thru vent' I did drill 12 3/4" holes for venting. 3 on the top on both the left and right sides then did the same thing at the bottom.

If you look at the last pic you can see 4 of the holes toward the bottom on the left and right.

I was going to bring some 5" swimbaits and leadheads for people to use. Looks like most of the swimmies  I'm bringing are MC Viejos. The lead heads are mostly 1.5oz so bring your own if you want to go lighter.

That's a good idea. The pangueros didn't think we had time to make bait the first day last year, so we slow-trolled rapalas and threw iron for little action. If we have no bait the first day this year, why not use plastics for calico? Unless of course they say that there aren't many calico around.

For the checkerboards I like something with red flake. Color patterns like Big Hammer's Red Calico Hunter and I have been doing well here in So Cal with the Senorita pattern.

HI Guys,

I just returned this morning from a 6 day at Cedros and wanted to let you know what worked for us to help out for when we get together in a few weeks for an amazing trip. 

What worked:

the early morning is key.  Yellowtail bite shuts off basically after 9am.  You may pick up 1 or 2 after that but slow.  today was our last day and my son, a friend and I picked up 17 quality YT in 2.5 hours on a combination of live mackerel and throwing jigs. 

The afternoons are generally very slow for YT although you can pick at calicos. 

You need to bring a few sabikis.  The captain like small size 6 or 8.  As Rich said if you use a heavy weight 8-12 ounce you avoid the dreaded sabiki tangle. 

Line - nothing under 40.  I used up to 60 for trolling mackerel for YT or dropper looping.  Flouro is not needed for YT but may be useful if tuna are in Sept.  Bring 40-50. 

Hooks - I just have used Mustad 94150 last couple of years in 5/0 and they have been great. 

Calicos - bring some 6-8 ounce type megabaits or colt snipers (pink, blue and chrome is great).  They like to fish the calicos at 60-120 ft on reefs and you can't get down with your swimbaits.  I actually put red plastics on my dropper loop rig to get down and slayed big calicos.  The captain thought it was funny as he hadn't seen it before. 

Yellowtail - we were trolling live mackerel and slinging jigs.  Yoyo type like Salas 6X - blue/white, scrambled egg, mint.  we didn't use any rapala type trolling lures but a couple years ago we used those instead of the mackerel.

Dropper loop rig.   see the following.

We were fishing for calico and my son caught a 120# (est) black seabass on a colt sniper, an Okuma PCH and an Okuma Komodo with 40#.  Crazy.  We released on the year before but decided to keep this one.  We only kept fish 2 of the 6 days we fished and released everything else.

a fathom 25nLD for trolling mackerel

a fathom 40 NLD for dropper loop

an okuma 463 on an 8ft PCH rod for sabiki, throwing light iron, calicos, etc.

an 8ft makiara rod with a penn torque 30 with 40 lb line for also throwing jigs

If you're all in on YT you only need one... a 40-50# rig for making bait and fly lining/slow trolling a Mac.  You could yoyo or dropper loop with it too.   But then I didn't become a tackle enthusiast to just take one rig and a couple of hooks!  I usually substitute a different word for enthusiast!

Anything lower than Wednesday and Thursday of last years trip will be fine!  One mph won't even cause the sweat to evaporate unless we're motoring at a good clip.

Hope it is not winds from the south  lol. There is a saying here in So Cal and Baja. Wind from the south and fish shut their mouth. But a 1 MPH wind should not effect anything except comfort. It may be time to slow troll those macks.

Edit: Alan, have you ever thought about a Mag Bay trip in around the same time frame? I'd be down, just something to think about.

Woke up to the sound of a big branch coming down due to the thunderstorm passing threw, it hit our fence.   Well I guess I paid my neighbors back for making noise late at night,  running a chainsaw in the dark went well.  Off to the shower then I hit the road.

    Living in a "small town", I'm pretty used to the "late night", or "early morning" noises....at least, in the "big city" it would be "late", or "early", "city folks" use different clocks than "country folk", or "villagers' do....log splitters, chainsaws, mowers, tractors, etc., can be "expected" from about an hour BEFORE daylight, to about an hour "after dark" ;)

 Okay fellas, I'm trying to decide between my GF765L with Tib SST8 or GFGR700XH with TRQ30LD2. I think the 765 rig would be better if it's predominately trolling, the 700XH for live bait. Both would be fine for yoyo.

Either rod would be fine. You'll be using Mac's for bait and a lob will get them out and they'll take it from there. I've used a 6465h and a 6470h in past years. I'm using a Phenix phd760xh this year.

so this was our second year with cedros sportfishing.  i can't say enough great things about the operation, but believe me i'm gonna try!  it's a dozen guys all total.  mike comes in from georgia, lee from oregon, and todd from british columbia.  the rest are san francisco bay area and southern california.  mike and lee came down to my place a few days ahead, to i took the opportunity on friday to show off a little of our local fishing out of half moon bay!  thanks to khanh for being our deckhand!

we had a full day to prep for the trip on saturday.  marc joined us that evening, and we headed out early sunday morning.  traffic in southern california was miserable, as usual.

this is one of the organizational features of cedros sportfishing that really makes a difference.  rosie meets us at the cbx with all of the needed paperwork.  we gather up all of our gear into carts and she shepherds us through the gate.  all of the paperwork is done ahead of time and we walk right through.

we leave rosie at the gate , take the elevators up, walk across the border and into tijuana on an elevated bridge, then take elevators down to customs.

once through customs (no photos allowed), we walk right out into the airport in tijuana.  we are met by more cedros sportfishing staff that check our luggage and they escort us to the departure gate where we wait for a bit.  when the plane is ready, we hop a bus for a short hundred yard ride to the plane.  we were wheels up in 10 minutes.

ok, so a couple of things about the operation.  it's really, really nice!!!  think about what most small mexican fishing villages must have been like about 30 to 40 years ago.  well, that's cedros. they are also working very hard to dial in the operation.  there were a couple of things about last year that we commented to rosie about and made some special requests for this year. 

we fished two guys per boat instead of three.  we had to pay extra, but it worked out great!

last year, we were sitting on hard fiberglass most of the time.  we had requested seat cushions on the boats.  we got them!

we had requested rod holders on the pangas.  got 'em!

we had requested lots of ice.  we got a half dozen bags instead of one.

and we had requested that the fish be gutted and gilled at sea, immediately after being caught.  the captains probably thought this was unnecessary, but it was pretty easy for them.  and the quality of the fish we brought home was amazing!!!!  i'm certain that it was so much easier for the guys that were cutting up and vacuum packing the fish as well.  and it also made it quick and easy to take the collars.  normally, i think they would just throw them away.  now that they have seen how good the collars really are, i'm hoping that they will not waste these valuable pieces!

not sure how many companies would be that responsive, but these guys definitely are! 

as far as the fishing went, it was slow.  we picked up fish with surface iron, fly lined mackerel, slow trolled mackerel, and rapalas.  different things worked better for different guys on different days.  the only concentration of fish and bait we saw was on the very first afternoon when we went out for a half day.  even calicos were scarce.  red weedless swimbaits are usually one cast, one fish.  not this time!  it just means that i'm going to have to plan better for next year!

all said, cedros island is an absolutely magical place!  i'll just leave you with a few short videos for you to enjoy!

Try steaming the sheephead.

Place fish on rack above water. Add Old Bay seasoning to water and maybe some lemon or lime. Not too much on the seasoning or citrus. Steam until the fish flakes with a fork.

mi Wife loves white fish more than YT

when I have the luck to catch some, we always prepare it as sashimi, not the normal sashimi way or japanese style, its more a cross style of Baja style ceviche and sashimi.

we cut it as for sashimi, but use lots of lemon juice as for ceviche, let the lemon juice work on the fish for 15-30 minutes and stir.
then use salt, pepper, red onion, avocado and ponzu sauce over the fish and some of your choice of hot sauce or fresh jalapenos, your choice.

we missed the avocado but pretty similar to this tostadas which were prepared on the panga

I like to get the fillets from the grouper and fry them on half butter half olive oil, pour some some white fluor or cornstarch on the fillets before put them on the hot butter to get a crispy coat on the fillet, once the fillet is crispy you can have it like that, or add some "pico de gallo" veggies over the fillet, or prepare some Alfredo sauce and cover the fillets with that and add some mozzarella cheese over that, my kids love the fish this way.

Grouper is also great deep fried on big thick chunks

Hi Mark,

I've cooked it in foil with fresh ginger, soy sauce, a splash of sesame oil and spring onions.  Most important thing is not to over cook it or it gets tough.  My favorite way was to drizzle olive oil and a little Cajun seasoning.  Put it on a hot BBQ.  Watch is closely and take it off when it is still translucent in the middle.  Let it rest while it finishes cooking.  Really moist and delicious!

The small piece of grouper I had got rolled in Panko and pan fried in olive oil and butter for my wife, she does not eat ceviche, and I tried it....IT WAS DELICIOUS!

I would not say that the fish did not cooperate; they did just not cooperate on the scale that they did last year. Every one came home with a cooler full of fish. We just did not catch as many YT as last year but everyone got into fish. Last year it was a slow troll with bait that hammered them. This year I caught  more on the surface iron which was really cool. I'm not sure about the other guys but I like chasing different species of fish especially after the morning bite is over ........................... you never know what you will catch with a live bait on the bottom.

No naps for me and I was one of the "party crowd" that stayed up past 9 pm !!!

I like a lot of my fish grilled on the BBQ. Just baste with lemon or lime garlic butter before placing on the grill and a few times while cooking.

No one mentioned the flood!  The input line to the water pump came loose one evening after most people were in bed and all the water for the complex drained out on the floor of the store room next to the Casitas.  We couldn't find the shutoff valve until all the water was gone. It was a couple of inches deep so up to the top of Richards ankles!  We used brooms to get all the water out.  We had to use buckets of water to flush the toilets the next morning until they could get a water delivery to fill the cistern back up again.

Yeah, it was only the yellowtail that didn't cooperate to last year's level. I caught more calicos this year than last, and RichK and I limited on nice grade sheepshead one afternoon after we gave up on the yellowtail. And Pete caught a nice WSB, and Mook caught a hefty BSB, in addition to a few groupers. So overall the fishing was okay, just not as many yellowtail as we got used to last year. The pangueros said that it was unusual for the YT to shut down like that at this time of year, so I expect that next year will be back up to par.

way up north in the Cortez Sea, Gonzaga Bay area, the YT was pretty slow this year and I mean slow, many friend had to change the  fishing grounds 3hrs more south to "Bay los Angeles" to fish for YT, hopefully it was only a one-year-thing and they come back as usual next season which start in late nov or early dec.

A comment on the fish:

- steamed up some of the sheeps head for fish cakes which were great !!< and then made a sandwich with the left over flakes and I have to say that Mook was right !; it tastes like lobster !! Very good. I will have to target  some of those again this year again. Picture attached .................. I don't know who is uglier !

- on the calico bass ; wow are they ever good which is not surprising as they are in the "grouper" family. They are my wife's favorite fish from Mexico. Seared or breaded wow !....................... sorry Mark but a few of those will be making the migration to Canada again this year (no big ones though !) .

Hi Alan, this is Lee, Bill's better half😆, That was an Awesome overview of the trip made me even consider setting Bill up for it next time just so I could tag along! Fabulous job I really do appreciate all the time you put in to fine tuning each and every trip, such wonderful memories your helping create! You make spending the time & money sooo worth it💝 thanks Alan, Lee Barella🙂

Those Sheepshead are some of the best tasting fish I've ever had from the Calie coast.
