Easter Sunday Supper in Charleston

Long Enuff

Local fried Shrimp and oysters with roasted okra and Charleston red rice.

Shrimp were dipped in an egg wash then dredged in seasoned flour and deep fried for three minutes.

Oysters dipped in egg wash and dredged in saltine crackers rolled out into a meal then deep fried about 3 minutes.  The trick is to brown the cracker crumbs and warm, but not over cook the oyster.


Okra tossed in olive oil, Kosher salt and coarse ground black pepper then roasted on a baking sheet in a 400 degree oven for twenty minutes.

Charleston Red Rice, saute' 1/2 cup each of diced onion, bell pepper and celery until soft, mix with a cup of uncooked rice, salt and pepper to taste, 1 sixteen ounce can of whole tomatoes, 1/2 cup water 1/4 tsp. red pepper, a couple of splashes of hot sauce in a lightly greased 9x13 baking dish. Cover with aluminum foil and bake at 350 degrees for 45 minutes.

Oh man, what a feast...  I'm a fiend for fried oysters and shrimp.

 Very nice meal. I have never roasted okra, got to to try it.
