Halibut Heaven

This is one of my all time favorite halibut recipes.

  First cut into small cubes, then start with tablespoon butter and splash of sherry.

Bring to simmer then add equal amounts of milk and heavy cream, just enough to almost cover the meat. When that starts simmering I add my vegetables, bring to simmer then top off with muenster cheese and serve on a bed of white rice.

This recipe works well with most fish, and it never hurt to add a few scallops and shrimp.

I will try that with my Flounder caught of the dock. Flounder really have no flavor.
