Some time ago in history the halibut was called the holy fish.  Maybe for ceremony?
   The meat is white and pure fine eating.    Itís more of a northern latitudes fish,   Butt itís my life.🤷‍♂️

That's because back in the day (hundreds of years ago), all flatfish were called "butts". The biggest and the best were saved for the priests or holy men. They became known as "holy butts", which evolved to halibut.
