Fiesta de Accion de Gracias / Thanksgiving Feast

So today is the first day of my multi day Thanksgiving feast.
I'm alone at home and cooking for myself, no one else to worry about.
Wife and kids are away in PA visiting family.

I'll start this off with a first class Fiesta de Accion de Gracias, that's Thanksgiving Feast for all you gringos. :p
There are two more meals planned,
Smoked/Grilled Duck with Crawfish Etouffee
Hickory Smoked Pork Belly with Crispy Skin

Menu
Carne Asada
Arroz Mexicana
Frijoles
Verde/Serrano Chile Sauce
Tortillas de maiz

Carne Asada
4.5lbs Skirt steak marinated over night.
Marinade
I don't think any two of my marinades are hardly ever the same/
Sure, they're written down, but I do them by eye.
Enough to cover my meat in the bag or bowl.
Marinade
Juice of 4 large limes
1/2C Orange juice
3T Soy sauce
3T Worcestershire sauce
3 large Jalapenos, finely minced
1/2 med Onion, finely minced
3T Garlic, minced
1/2C Cilantro, finely chopped
1T salt, pepper and cumin










Green/Serrano Chile Sauce
1 27oz can of whole Green chiles
6 Serrano chiles
1T Garlic, minced
1/2C Cilantro, minced
1T salt
Combine everything but cilantro in a blender, puree, stir in cilantro.


Arroz Mexicana aka Mexican Rice


Frijoles / Frijoles Refritos
Today I browned all the trimmings from my pork belly and added them into the beans.
After a several hours I pulled the pork and jalapeno out, minced them and returned it all to the pot.

That looks awesome. A lot more flavor than the Turkey I had, although I always stick to tradition on Thanksgiving for better or worse.

I would love to spend a stress free Thanksgiving on the Beach With just my Wife and Me.

But yeah, that meal for six, maybe even eight, is being spread out.
Early dinner, late dinner, huevos rancheros breakfast and two meals frozen for work lunches.

Im "norteƱo" (live in north Mexico) and we love flour tortillas for everything, on mid / south Mexico normally use corn tortillas.


Chile, have you every tried or made " Frijoles puercos"?  literal translation is "filthy beans" but actually its a coloquial name for "pork-ed beans"
pretty sure you already cooked them before but if you dont you should try it

need your choice on pork-belly or Beacon in a decent amount, the more the better
cut it on small chunks and fry it until they are crispy and they lose all the grease, then take them out from the frying pan

take the bacon grease an add it to a bigger pot, add a whole chorizo to the Bacon grease, could be your personal choice of chorizo but spanish chorizo works better (this needs to be cut on small square cuts before to cook it), fry the chorizo until ready, cut one onion and 2-3 jalapeno pepper and add it to the chorizo, wait till is sauteed, then depending on your beans quantity add some lard to fry your bean, add your beans, put the heat in high and wait till it start to boil, add the beacon that was taken out at the beginning and take your bean masher and mash everything really good, the more mashed the ingredients the better.

at the end you can add your personal touch with cheese, nachos, more chiles, etc

Yes'sir, I've made them, refritos on steriods  ;D

I almost hate to say it, but those are fried corn tortillas, I prefer mine fried over steamed.
I love the texture and taste of both fried flour and corn tortillas.

no need to worry pal, actually I like to heat my tortillas on direct flame (on propane stove) until they start to burn and are crispy so, I know what you
mean by not fan of steamed tortillas.

so your last pic its actually a soft tostada in a taco form, killer dinner in my books
