Pan fried skate

This one is simple, I did it years ago, so this is from memory.

Skate is a slimey, but damn is it tasty.  But a wing off a fishing boat in Half Moon Bay and made some of the tastiest fish I ever had.

One skate wing, skinned and deboned into filets.

season with salt, pepper, and bit of onion powder and garlic.

Using a cast iron griddle, set it on medium to medium high heat (pan will work as well).

Throw about 1-2 tablespoons of oil and a table spoon of butter on the griddle and let the two meld together.

lay your fish into the oil and let it cook 2-4 minutes per side (until done). Turn once and repeat. Serve
