The guide is a Red Seal Chef as well so he knows his way around a knife-I actually got more meat off this one than a somewhat larger model caught years before & cleaned by someone else.

Grew up as my favorite, now definitely in the top 5. Good anyway you do it from the smoker to oil and everything in between.
