Forgive me it's been about 8 years since I got my BPCS cert, and about 3 years since I've canned anything. But I was taught that to kill cbot spores you need about 100°f more than what's described above. Am I missing something?
Any machine is a smoke machine if you use it wrong enough.

Proteolytic cbot spores require retorting for destruction. These are not destroyed in smoke fish. Only controlled with temp. Non proteolytics are controlled with much lower Temps. What is described for hot smoking is partial destruction. A 6D lethality of non proteolytic type b starts at 185F for 51.8 minutes moving up to 212F for 1 minute. That would cause the fish to fall apart.
