Henry\'s Caldo Pescado (Fish Soup)   Yield: 12 Servings (The Key is to Use the ABSOLUTE  FRESHEST INGREDIENTS)
This is not only a very nutritious Soup it is fun to Cook and you can vary the ingredients as you !ike;this is just a starter for you ...Enjoy, Henry

5 Fresh Tomatoes, Parboil And -Remove Skin And Quarter
3 Cloves Garlic, Finely Minced 
Two Large Onions, Chopped
3 Tbls Comino
3 tsps Coriander
1 1/2 cups Fresh Cilantro, Chopped -Fine
1 tsp Garlic Salt
3,  6oz Cans Tomatoe Sauce
 1 Tbls Paprika
2 Tsps Fresh Rosemary, Finely Chopped
1 Bottle Blackberry Wine (MERLOT)  byWild Vines
1 Cups Fresh Carrots, Diced
 1 Cup Fresh Celery, Diced
 1 Cup Rice
6oz Louisiana Pepper Sauce
 1 tsp Tabasco Sauce
8 Medium Jalapeno Peppers) Remove Seeds and Ribs and wash thoroughly (This Removes most of the Heat) Then Coarsely Chop.(also wearing latex gloves helps the ol\' scratching wrong places later )
 2 1bs Fresh White Fish - Snapper, Trout, Cod, Whiting, Perch ,Bass, ...etc Cut Into Marble Size -Pieces
25 To 30 Medium Fresh White -Shrimp) Shell And De vein And Cut In Half .
1 Lime
2 Lemons
1 Large Bell Pepper) Chopped
1 Gallon Water
1 qt Chicken Stock  (Fresh Made Is Best )

Cook the rice with some Chicken Stock and a little juice added from the lemons and save for later.
Juice the lemons and Lime and add half cup water then season the shrimp with a little Hot Sauce ,Tony Chacheres Creole Seasoning and Cavender\'s All Purpose Greek Seasoning and place in a bowl and pour half the lemon lime water mixture over them and do the same with the Fish in a sperate bowl and Refrigerate. In a big pot bring water Tomatoes,Tomatoes Sauce, Carrots, Celery and all the dry spices mentioned in ingredients to a boil occasionally stirring. Lower to a simmer and start adding Onions .Chopped Cilantro,Garlic and other fresh herbs and the rest of the Vegetables. Have some of the Blackberry Wine .Now as the Carrots, onions ,and Celery gets soft 20 minutes or so, add the rice and stir good add additional water if needed to keep a watery consistency .Bring back to boil and add Shrimp wait two minutes and add Fish and Stir. Cook for five more minutes and take off heat and serve with a Good French Bread and any kind of Wine you like If your like me you will have a few guests around taking in the Aroma of this as it Cooks and the Blackberry wine won\'t last so would recommend a few Bottles......

The Wine is not included here ..But has a lot of VITAMIN P if you drink a lot of it .
