As the title says I want to know how you remove grease from carbon drag washers. Can you use white spirit?

don't bother.  just use an old rag and rub out as much grease as you can.  then slap on a thick coat of cal's teflon gre, rub off all the excess and you should be fine.  a little bit of hydrocarbon based grease on the drag washer is not a problem.
