I would like to try vertical jigging would the older spinfishers hold up to the task?

Changes you in spool drag system from a 3-stack to a 5-stack.

The 7500s have been my staple reel for some 20+ years for  bailing Dolphin and pitching jigs to Cobia etc. but for speed jigging using spectra, I think there are better options as they were made for mono and aren't the best tool for the job. They may get it done but once you use a reel that is appropriate for the task you will see what I am talking about. It is not about the drag but the smoothness of the retrieve and the line lay.
Just my opinion for this usage. Your mileage may vary.
