I opened my email this am, and had an email from Don with the same photo,
My first words were, "Whacko the Diddlyo" from page 45 of the ASSIE TALK book Don gave me - "Whacko the Diddlyo" meaning Fantastic!!!!
Looks like a great day on the water Don, PLEASE let us know how you plan on cooking the Dhu fish and which cooking method is your favorite!!!!!!
Wayne
Looks like a good day on the water! What outfits were you using? - john
Nice catch, Don!
Nicely done Donny. You're a fish catching machine !!
Good to see you getting your boat out on the pond
-Ted
thanks everyone, Wayne, Pat frys them in a thin beer batter, just to keep the moisture, in the flesh, do not over cook.
with the Samson fish, from the amberjack family, like yellowtail king fish, they can be really mushy crap most of the time, but they also can be nice some times, we cooked some to sample, this lot is really nice, other wise we would use them for fish mornay, or fish chowder.
John we use a 16 once sinker, with a 10/0 hook about a foot up, then another 2 foot up we have a 6/0 hook for snapper, or red throat, blue bone grouper or what ever. hope this helps cheers Don, by the way, don is the older bloke in the pic, yes that right the good looking one. yee haa.
Arlyn, thanks for placing the pic here first, very nice of you.
Sorry John, i only answered half your question, the reels we were using, Mark was using a, shimano TLD 25, & I was using Pats Daiwa tanacom 1000, electric reel, I mainly wanted to try the jigging mode out on it, but was to bizz, I must admit fishing in 40 to 55 M of water, with a 16 ounce sinker, it sure make it easy, Pat & I are heading out in the morning again, so I will have to use my old trusty 6/0, or the 9/0, stay safe keep well cheers Don.
Great fishin' Don! 8)
Glad to do it, Don ! I figured that you were the "good looking" one, in the picture !
Looks like a fantastic trip,,,,, ;) good eating too,,,,,,, ;D
Looks like you had a good fishing well done Don
Kim
Thanks Kim, Benni, Arlyn & mike, Patricia & I had the boat back in the water, just on daylight, yesterday, we had to strain our eye for any rocklobster float, in the water, until the sun was higher, we could see some whales almost jumping right out of the water, on the horizon, they were in an area about 33 m of water, we went to the same area as Sunday, could not get a decent bight all day, we tried a few other marks as well, came back with one red throat, & 2 wrasse, I must admit Pat done a great job, holding her electric reel all day, she really tried hard. but thems are the breaks ay. cheers Don.

Well you didn't get skunked and I think next time you will get the big one,,,,,,,, ;D
Love the pics from around the globe. Both of those fish look like would be good fighters ? But most likely, based on their confirmation, use different tactics once hooked... Jeff
You guys are blessed with an awesome fishery,
That is some whackey fishing Don!
Thanks Gobi, we went out again today, Pat caught the first fish, a Dhu fish it was 49.5 cms, legal size is 50 cms, shucks, then I caught a 54 cm Dhu, not long after, Pat caught a double header, a Dhu fish, & a blue bone grouper, ball chin grouper, or a Tusk fish, there are several variety of them, but we have a unique species, on the west coast of Western Australia, we have taken a picture of the one that Pat caught today, hopefully our old mate Wayne O, can blow it up & place it here for every one to see, if you google blue bone grouper, you will get about thirty different, fish,. by the way the Dhu fish was under size as well. poor Pat.
Jeff thanks for your question, on catching the two fish, the samson fish, like the yellow tail king fish will fight all the way to the surface, the Dhu fish will fight good for a short time, when down deep, then barrow trawma set in & there dont fight much after that, but a different story when you hook the in shellow water 12 to 14 m, they really turn it on then. I caught to snapper as well, so came home with a good feed again, cheers Don.
Don sent me these photos and asked if I would post on the site.
Here you go Don!!! Looks like several great meals for sure!!!!

Need some information from you Don!!!!
- How do you catch these fish?
- Best way to cook them??
Inquiring minds....
Wayne
Thanks a million once more, Wayne, I have already commented on the blue bone, I am not sure how big they grow, this one was 47 Cms, I have caught them to 68 Cms, eating quality, they say coral trout are the best to eat, but the Dhu fish & the Blue bone are right up there.
as I have explained before Wayne, we like to fry our fish in a thin beer batter, this helps to retain the moisture in the flesh, & like most fish do not over cook it, or it turns into leather. they all have nice white flesh. this breed of blue bone are caught from the south of the West coast, up to sharks bay, they are very plentiful @ the Abrolis islands, they are North west of Dongara, up to West South West of Kalbarrie,
the blue bone are caught with many baits, octopus, squidd & shell fish like small crabs, the minimum size is 40 Cms, thanks you again Wayne you are a good asset, not only to me, the forum in general, we have till October 15, then the demersible fishing closes till December 16, cheers Don.
It's a sand grouper holdings the fish but I don't know what type of grouper that is?
Kim
Thanks Kim, when Pat was younger, she told me I was a grouper, I dont think she was refering to my good looks though, cheers Don.
Wayne - Thanks for putting Don's photos up! I have to say that blue bone grouper "almost" sorta looks like a distant Aussie relative of our SoCal sheepshead - roughly same kind of body shape and looks like some serious jaws for crunching shellfish off the bottom. Those look like some good eating, beer batter or not! Great to see you getting in some trips and showing us how it's done! - john
Thanks John, yes they do have strong tough teeth for there size, I think they would eat a lot of shells, I have sent Wayne some pics of the spine, & will send more after I eat the flesh from then, then all will be able to see the blue bones, cheers Don.
7-10-020, Pat & I had the boat in the water 5:30 am, early sea breeze forecast, so we were trying to make some new marks, dropping our lines near rocklobster pots, we managed to get 1, 62 Cm Dhuey, home early, maybe good again on Friday, cheers Don.
Don sent me these photos to post with some information regarding what you are viewing.
Hi Mr Wayne, two pic here, first pic shows the blue bone spine, & the other is from a snapper spine they quite often have these nodule in the spine, also the snapper here in West Aussie,
have large humps on top of there head, compared with the snapper in South Aussie or on the East coast,
cheers Don.

As Spock would say on the TV Show Star Trek... "Fascinating Jim!"
Wayne
Ole' Mother nature sure has some strange "kids', don't she ?!
you weren't kidding about the blue bones! - john
Whoa, looks like bone tumors.
Thanks Wayne for posting the pics of the blue bone spine, sure is blue ay, yes many of the snapper, have the nodules on there spine, I just cant explain it, but interesting, keep well stay safe, cheers Don, thanks again Wayne.
Don, hope you're not discarding the nodules. Those are a delicacy. Just grind em up and add to your cup of tea :D :D

Maybe Don should not fish near the nuclear power plant. :D Dominick
Thanks Ted, maybe it will strengthen my back, yes Dominik, the UK did do nuclear trial on some of the islands, about 3,000 miles North West of here, back in the 40`s n 50`s, but I only find the nodule in snapper, you would think it would effect all fish. thanks & cheers Don.
More photos of the Blue Bone Grouper from Don, Here is his last email & attached photos.
Hi Mr Wayne, sending some pics of a blue bone that pat caught yesterday,
it doe not show to good but his teeth are blue on the ends,
also a nice pic of the different colours in his eyes, maybe the was cos it was looking @ me,
cheers Don
Pat also caught a black snapper about 5.5 kgs, I got a school shark about 5 ft long.
We went out again this morning but the wind was getting stronger on the way, so we came straight back to port.

Dangest creatures Downunder, for sure Don, BUTT where is the photo of Pat's 5.5 kgs Black Snapper (or just over 12 lbs), Inquiring minds what to see her fish!!!!
Wayen
Sorry Wayne about know pics of Pats black snapper, the fillets were about to be cryvaced, when I thought of taking the pics of the blue bone head, & I had sectioned the spine for eating as well, Pat is camera shy, I wanted her to hold the blue bone that we first photograph, but know go.
I must admit, she done a good job of landing the black snapper, using her electric reel, & me on the net, Pat first said that I might have to take over, but I suggested to her to back of on the speed of the electric reel, that way less chance of pulling the hook, & not as taxing on her hands & shoulders, it was taking some drag a few times, but I had my money on the old girl, yee haa, not bd considering she is mid 70`s.
the black snapper is a Morwong, some people say there not much to eat, others say they would swap a pink snapper for a Morwong any day, cheers Don.
