Title: Creamy Garlic Parmesan Chicken

Creamy Garlic Parmesan Chicken

1 large B/S Chicken breast per person (2 if they're small)
Salt well and grill, get plenty of sear on it
Cool and slice, chop or shred
Set aside

Sauce
3C Heavy cream
3C Chicken broth
3T Garlic, minced
4C Parmesan, shaved
2C Sun dried tomato
5C Spinach, fresh
4T Butter
1T Salt
2t Rosemary, fresh, minced
1t Thyme, fresh, minced
(if necessary substitute 1T dried Italian spice mix)
1/4C Flour, paste made with water

Melt butter over low heat
Add everything but the cheese, flour and spinach
Over med heat, bring everything to steaming hot, do not allow to boil
Add parmesan a cup at a time stirring constantly till melted through
Thicken with flour paste to desired consistency
Add spinach, cook till it just starts to wilt
Remove from heat
Add chicken

Ladle over your choice of pasta

Out of concern for Dominick, no Bacon was used in this recipe.

If Dominick has something against bacon then he's no friend of mine. Even my Jewish father in law likes bacon!

Actually it was all a joke.  I never met a bacon I did not like.  That's why I am on statins to keep my cholesterol down.  I wonder where John would go if he discovered pancetta and guanciale.  These pork products are true pork flavor with no smoke taste.  If you all have not tried these search them out and use them.  Use guanciale for spaghetti carbonara.  Or just guanciale with garlic.  Dominick

Dominick, I'm a fan of both of them. Great in rabbi with sausage along with favorite pasta, some pancetta and some red pepper flakes. Oh ya baby!

Pancetta and Guanciale I are well acquainted, as are Cappo and Culatello.
After living and eating for years in San Diego's WOP Town district, and my affinity for well loaded trays of antipasto, yeah, BTDT.
Same goes with a nice cup of Caffe coretto or straight Grappa after dinner, at least back when I still drank.


Oh yeah, don't take the WOP Town name derogatorily, even the Italians there proudly call it that.

I had some famous Dave's rib tips and wings for Lunch yesterday.
It was off the hook! Included cornbread muffin and beans with onion and pickles.
All for 10 bucks, It is off the charts bad for you, but the price was right. Free!
There is nothing like some smoked pig!

Looks good John!
I made some chicken as well this evening, one of my wife's favoriye.
Chicken breast cut into two and punded flat, filled with previously cooked spinach with garlic, a small piece of parma prosciutto and cheddar.
Rolled them up, dipped in egg and a mixture of planko and flour.
Seared them in a frying pan and placed in the oven for 1 1/2 hour.
Sauce made with the dripping from the fried chicken, added baby portobella, garlic, pepper and salt.
Also a splash of white wine to bring it up a notch, fresh italian parsly and homemade checken broth.
Placed the chicken on a bed of rice and poured the sauce on top.
Mmm...good...

That looks fantastic, worth every minute of time in the kitchen is my guess.

Man, You guys make some seriously beautiful meals over here on the AT cooking channel. ;D
I have never cooked anything on my stove except boiling water for my coffee... no kidding.  I'm 40 y/o and have zero culinary skills, but I have a wife that cooks up a storm. She learned from her mom, who learned from her mom, so these are dishes that have been past down through the generations.  Kim also likes to create new dishes out of no where and nearly every time hits it outta the park.
That was a requirement for marriage (and she knew that) as I come from a family of old fashion cooks and restaurant owners.  I, on the other hand, clean till I can't clean any more.  I love cleaning and have no problem doing any other household chores, but cooking is not for me.  Your wives are lucky ladies!

I can't cook either. I can however Grill.
I do so whenever I can.
My Wife Teri, Couldn't cook anything when I met her but instant potatoes and Tuna Casserole.
My Father was a Chef and taught her everything she is today,
She spoils me Rotten.
Her Manicotti is to Die For, Home made Enchilada's, Chicken and Beef, Minestrone that is beyond belief.
I married a good Woman.
