Pan seared Hamachi Kama with shredded spicy lobster, avocado, celery and cucumber roll. Topped with fresh hamachi and spicy sriracha mayo and sesame seeds

The collar was perfect Mark...We will go thru them quick as they don't freeze very well.

The big chunk is the yellowtail collar. Hamachi = yellowtail (more or less). I think, in Japan, hamachi is a small yellowtail. The Japanese have names for fish like Eskimos have names for snow!

how did you cook the collar?
oven?  grilled?  pan frayed?

Mmmm, mmmm, that collar looks mighty tasty.
Makes me yearn for the upcoming Fall Redfish season, their throats are prime eating.
