I decided to cook up the limit of Shapies I had in the freezer today. They have pretty dark meat, so I prefer to slow cook them in Sauerkraut.
-Debone
-Soak for a few hours in buttermilk, or a saltwater/vinegar solution (to leach out some of the blood)
-Season
-Brown with bacon & onions
-Place in the crackpot with Sauerkraut sprinkled with brown sugar
-Cook until the meat falls apart
-Serve over mashed potatoes
