Not much explanation needed...Cook good fish fast and hot, let rest a few and use a sharp knife to cut with...You can only screw up fresh fish by over cooking or over seasoning...IMHO.

just defrost that fish outside of the vacuum package if you use a slow defrost. Unless that bag is oxygen permeable, you have a very serious risk of botulism if your fridge has an ambient temperature above 38F.
If you wanted to do a fast defrost, take the bag right out of the freezer and put it in a bowl of cold water and run the faucet very lightly in the water for about 30 minutes and then open the bag and cook immediately.
