here you go dominic & all tanites
2 tbl spoons chopped mint
2 tbl lemon juice
2 tea spoons oil
combine mint,l/juice,oil add fish turn to coat
moderate heat,cook 3 minutes each side
serve on top of salad
liz does a watercress salad
watercress,tomatoes,capsicum,radishes.combo sprouts
cheers
the fish/it does 600gm fillets,white flesh is best

Thanks Liz.  Wallace the use of mint is very Italian and Greek.  My mother used mint in her tomato salads.  I never thought of using it to flavor fish.  I definitely will try it.  Dominick
