Title: Bacon-wrapped Jalapeno Poppers

Tried out a new recipe on some pheasant today...

I actually used the stuffing, and glazing part from this one...

They were a bit putsy to make...
1)Debone 2 pheasants
2)Marinate overnight
3)Prepare stuffing, peppers, watercress, bacon, and glaze
4)Stuff and wrap peppers
5)Cook
6)Enjoy!

They turned out really good.  

Note: The black brunt stuff on the pan is just the excess butter/brown sugar glaze.

Those are some killer looking hors d'oeurves, and I bet they tasted fantastic too.

In celebration of Turkey Joe's 50th birthday...

I decided to whip up some bacon-wrapped, wild Turkey stuffed jalapeno-poppers, and stuffed Anaheim, and Bell Peppers.  

As expected, they are delicious.

Also they should go well with his Wild game-themed fair...
Marinated Big Island Muflon Sheep, Wild Boar, Axis Deer, and a cajon shrimp boil.

Here's a recipe for you to try, these are freaking great!

Range Rattlers

Whole Jalapenos, large, cut end off and remove seeds/ribs
Shrimp, medium 41/50 count, peeled & de-veined *depends on size of chile
Bacon, cut strips in half
Eggs, large, 4-6
Batter, whichever you like best, I like my Chilerelleno egg batter
toothpicks

Insert a shrimp into a jalapeno.
Wrap with bacon, secure with toothpick.
Dust in flour.
Dip in batter, deep fry (350') till well done.

Batter
separate yolks/whites from eggs.
(Note: Of a yolk breaks, you cannot have even the tiniest speck of yolk in the whites. they will not whip if you do.)
Beat whites till firm, whisk in yolks.
