Title: Salmon Caviar with Salmon Collars & split heads for Dinner at Dom's

Was invited over to Dominick & Linda's for dinner last evening, and the pitchers duel against the NY Mets vs. SF Giants.
First of all, what is a MET? ::)

Into this, under the corrective assistance of jigmaster501 from this site, was told to freeze the roe for 7 days to kill any parasites.

Dominick made homemade blini:

and with the caviar, blini, sour cream, chopped onions & seasoned chopped hard-boiled eggs & a bottle of bubbly, it's pre-game appetizers

Somewhere around the 3rd inning, Dominick headed outside to make Salmon Collars & Split Heads into dinner.

I flipped the coin, it was heads for me!  Twenty delightful minutes of picking every little piece of meat, fat, cheeks off the head bones.  Taste this AND YOU WILL NEVER AGAIN throw overboard any salmon carcass, EVER AGAIN!!!!!

Hey thanks Wayne.  Now all the Asian members of this site are going to be sorry they kept telling us we were throwing the best part of the fish away.  Too late.  The secret is out.  I ain't giving my collars and heads away.  Except I won't eat the eyeball.  Wayne just sucked up the eyeball like he was eating a jelly bean.  He also eats like a growing boy.   ;D  Dominick

OH Man, does that all look freaking fantastic.
I've a special place in my heart and on my palate for Ikura, and those collars look danged near divine.
Never had a Blini or caviar served with such, but it looks like a combination of flavors I would enjoy.

That caviar dish looks amazing! The collars too. As for the heads, I would just eat the cheeks, lol.

I went on Youtube a couple of videos on how to clean and salt the roe.  It is really a pain to pick the membranes out without breaking the little balls.  They tasted pretty good.  Dominick

These are much better than sturgeon caviar in my opinion. 
I love the collars but I'm still hesitant on the heads,
Guess I have to just swallow my fear and give it a go. 

You boys did great and the game was fantastic!
