Smoked Jalapeno Poppers
2#s of large Jalapeno chiles, some whole some halved, remove seeds/ribs
3 8oz blocks of Cream Cheese, softened
2C Conecuh Cajun Sausage, diced small
2# Bacon, thick cut
1C Green Onion, sliced thin
1T Garlic, minced
1T Smoked Paprika
1T Mesquite Habenero spice mix
2t Cilantro, dried flake
1t Sea salt
Set aside the Jalapenos and Bacon
In a large bowl combine all other ingredients, blend well
Place approx 2C of mixture in a piping bag ( I use doubled heavy duty Ziploc bags with a corner cut off.)
Squeeze mixture into prepped chiles
Wrap with bacon, use toothpick to secure
Smoke over favorite wood, 250' till bacon crisps

John, my daughter loves Jalapenos, last week I made the same as your showing, Yesterday I made Jalapenos in a blanket.
Basically the same, this time they were wrapped in puff dough and had bacok pieces with cream cheese.
Good stuff!

Thanks, one of my favorites too... I don't have that problem, except with Super Hots if I eat the seeds.

Sal, ya gotta make her some Range Rattlers.
Range RattlersPeeled shrimp/tail on, stuffed into a large Jalapeno (capped and seeded)
A stick of cheese crammed next to the shrimp if there's room
Wrap in bacon
Dip in batter and deep fry well done
Yes'sir gotta remove the ribs/seeds for the filling, and this takes 75% or more of any heat out of'em.
Not that Jalapenos have any real heat anyways. ::) But everyone's guts handle stuff differently. :P
