My wife's request for her birthday dinner was that I make my gumbo. Now I'm not one to toot my horn, but i make a pretty good gumbo. And for my wife's birthday, I wasnt gonna disappoint. She had just one job though, in between the massage and mani pedi I got her, she had to put away the chicken I left out to thaw. Well I guess she was too relaxed. No big deal, I get it. The chicken is a loss though. The good news is I had other stuff in the freezer. So this is a shrimp sausage and redfish gumbo. And in my house you know its gonna be hot.
Oh man it was good.
My record batch size was 5 gallons. That was an all day thing.
You shouldnt have had chikkn in the equation in the first place with the rest at hand.....

History or recipe? Both are fairly extensive
I believe it is a southern dish.
My Wife make a Shrimp and Sausage based Gumbo that will knock your socks off. :o
The roots are African, with slaves in Louisiana introducing it to America, from there it got some French influence. Its the signature dish of new Orleans. it's a stew made from shrimp sausage and chicken usually, with lots of okra, peppers tomatoes, onions, etc. And a good roux is a must.
They sell kits but I always do it from scratch.
The main ingredient though is time.
5 gallons. Now that's a jumbo gumbo 😋

Maybe it's gum-bo (gum for shrimp, and bo for boar) gum would be short for Gump, and he caught lotta shrimp
Gumbo is a stew. Originally made with local ingredients & as spicy as you want it. Popular with pork sausage, chicken, & shrimp.
