My m.o. usually works for ribeye,ny strip, and sirloin I get the Weber up to 450 & cook
7 mins flip turn grill off, perfect medium rare.We got these cowboy steaks at sam's,I think it's actually a 2" ribeye with the rib bone.We got for Grand kids because they said it looks like a
Fred Flintstone steak ::) .Anywho it was a bust, tuff as cardboard. We froze the leftovers until today.Wife put in crockpot 6 hours with gravy moocho black pepper, garlic mashed taters,& grilled asparagus :al
I'm just amazed kids still know who the Flintstones are.
The crock pot can also save a freezer burnt steak.
I bought the flintstones dvds they never seen before now love em,my fav growing up, gilligans island & flipper.dont make shows like that anymore
If the Grandkids want a Fred Flintstone cut of meat get them a Tomahawk Steak next time.
Ribeye essentially, attached to full size whole rib.
I'll think is what flipped the car over in the opening of the cartoon! ;)
I've yet to have a Tomahawk but it's on my bucket list.
Steve
I found this article, they are both ribeyes with the rib bone, just trimmed differently:

Nice article! Now I'm getting hungry...-john
EVERY BBQ Master has their own special method —- and each is slightly better than anyone else's on the planet.
Choice (not Prime) Ribeyes from Costco (has a little more fat for flavor).
Salt & pepper the steak —- hand rub.
Using a Weber LP Gas bbq with a hood & cast iron grates —- turn it to high, add a SS tube of Mesquite pellets to the grate.
As soon as the pellets start smoking —- put the steak on.
Keep the hood closed.
4 minutes —- then do not flip, instead turn steak 90° for another 2 minutes —- then a flip for 2 minutes. This gives you a cross-pattern burn on one side —- and seals the juices without leaking out the bottom.
That is it.
Steak comes out medium rare & juicy.
Nothing fancy —- dead simple and easy.
Sue has 6 ounces, I have 8 ounces.
We do a steak once a week —- year round. Then lamb, chicken, country pork ribs, and fish the other days.
I am the BBQ'r and the dishwasher, and coffee-maker. Sue does the sides & salads.
Tonight is 93% lean hamburgers with lettuce, tomatoes, red onions, cheddar cheese, dill pickles, on buns.
Truthfully, since Covid, we eat really good meals and save about $500 a month by not going out to restaurants twice a week.
Best, Fred
The Cowboy and the Tomahawk are the same thing, except the Tomahawk has a larger piece of rib.
Now I'm hungry...
Going to give your flipping technique a try Fred!
Steve
Them tomahawks looks great!Fred I will try that trick,I also like a little seasoned salt or garlic salt
As well.
A while back -- 22 lbs of tomahawk ribeye steaks, nearly ready for the grill. Roughly, 3 lbs per steak @$26 each.
Now that I think about it I wonder why they trim the rib meat off the Tomahawk.
I like beef ribs so it's kind of a bonus!
I'm a little spoiled in that there's a little place up the road from me that is very reasonable and will outdo my cooking at every turn. Scroll down and take a look at the monster rib eye. You can only get it on Sunday, but that's OK.

That's some good eatin' right there I don't care who you are! At a restaurant no telling the Cost, better at home...no crowds, no waiting.
You'd be hard pressed to do it cheaper at home. Just the meat would cost me$38. This is what you get for $49.95
Sunday! 42-45 oz. Duck fat reverse sear Angus top choice Cowboy Ribeye for 2 with 2 giant baked potatoes, steamed broccoli with Bearnaise, Veal Demi-Glace, Chimichurri and basket of French baguette & butter $49.95

Wayne
Alright Wayne! That's how ya eat yer steak! Like yer Hun ancestors. The Great Outdoors with no need to be civilized, where a man can be a man
Did you leave anything for the dog Wayne!
STEVE!!!!
It is CALLED a DOG BONE...
ONCE all the meat has been chewed off!!!!
THEN, and only then, does the dog get the bone!!!!!
Wayne
Just checking! ;D ;D ;D :d
No body want's to put up with a mad dog in camp!
That was one great trip. I even enjoyed the 40 mile 4 wheel drive portion of the trip. Wayne is too humble, Fred and I had nothing to do with the cooking of those tomahawks it was all Wayne. He cooks a hell of a tomahawk. Dominick
