I just wanted to share with you a book I picked up on seafood that I think would be a really valuable tool for anyone wanting to elevate their skills of fish processing.
Chef Josh Niland author of the Whole Fish Cookbook has come out with this book focusing on fish butchery. It's a well done book loaded with fundamental info on fish processing, beautiful images, recipes, and some high level fillet skills, with step by step instruction and illustrations.

I'm pretty decent with a fillet knife, but this is on another level, and I despise waste when it comes to precious resources, so I'm really impressed with the low waste ideology.
If you're looking to elevate your skills in processing the catch, this book is worth a look.
