Title: Canned Westport Albacore

Came home with WAY TOO MUCH Albacore from my last trip, so much that I had to pay Alaska Airlines and overweight fee of $100 to get it home.

In the end we canned 54 pints and could have done more but we emptied Walmart of all the pint flats they had.

Two Tablespoons Olive Oil.
Two Teaspoons Lemon Peper Spice.
One Tablespoon minced JalapeƱos.
Two Crushed Garlic Cloves.
Albacore to withing 1" of the top of the jar.

10PSI for 1 hour twenty minutes.

Keep in mind boiling water is dangerous...

My God kitchen work is so crazy these days. I just did mine this summer and I'm still sweating.

LOL I kinda have an idea, in some parts the woodwork on your kitchen is similar to mine.
but I also know woodwork in USA is way more expensive than here.

 Did you say 10# for 1 hour and 20 minutes ??

 The industry standard recommended time is 90 minutes at 10#. 1 hour and 30 minutes !!!

 Thats 90 minutes total. According to your original post you only did 80 minutes.

 I always do 100 minutes at 10#, because better to be safe than sorry.

 AI says 75 minutes is ok for pint jars, and 90 minutes for quart jars, but i still do 100 minutes no matter the size of the jars

Hey Ted,

Maintaining 10 pounds was constant monitoring, sometimes I'd look and it was 15 PSI, other times it was 12. Electric stoves are so inconstant. The 1960's original manual said 10PSI for 120 minutes for fish so that's what I've always done, plus the extra dialing in.

I followed the recipe in the manual the cooker came with, just like I do every year. Nothing from memory because my memory is shot!
