Found this on the Tony Chacheri Cajun Spice website, the original calls for WAY TOO MUCH cajun spice, and I've adjusted it here, the wife and kids normally don't like beans in the chili, but all like it here...enjoy

Tony Chachere HeMan Chili

You must have a big appetite for the spicy He-Man Chili. This dish has true Louisiana heat! A hearty combination of sausage, beef, onions, hot green pepper, tomatoes, pinto beans, kidney beans, and of course Tony's Original Creole Seasoning. Saltine crackers are the perfect compliment to this dish.
Ingredients:

1 pound Hot Sausage
1 pound Beef(Ground)
1 Whole Chopped Onions
1 Whole Chopped Bell Pepper
2 Whole Garlic Cloves
1 Whole Louisiana Hot Green Pepper or Jalapeno (Diced)
1 cup Burgundy Wine
1 teaspoon Dry Mustard
1 teaspoon Celery Seeds
2 tablespoon Chili Powder
3 cup Roma Tomatoes
1 tablespoon Tony Chacheres Original Creole Seasoning
1 can Pinto Beans (spend the $ for quality beans it's worth it)
1 can Kidney Beans

Directions:
1: Slice sausage into 1 inch pieces and fry in a Dutch oven until brown.
2: Removeandsetaside.
3: Pouroffexcessfatandfrygroundbeef.
4: Drainandsetasidewiththesausage.
5: Pourexcessfatfrompot.
6: Cookonions,bellpepper,garlic,andhotpepperoverlowheatuntiltender.
7: Stirinwine,mustard,celeryseeds,andchilipowder.
8: Simmerfor10minutes.
9: Inabowl,mashtomatoes;pourintopot.
10: Addmeats.
11: Bringtoaboil.
12: Reduceheat;seasonwithTonyChachere'sOriginalCreoleSeasoning.
13: Simmerfor30minutes,stirringoccasionally.
14: Addbeansandtheirliquid;returntoaboil.
15: Reduce heat and simmer for 1 hour, stirring occasionally.
