Title: Braised Squirrel

Last Winter my 7yr'ol son and I hit the forests this AM, gunning for Peter Cotton Tail & Squirrel Nutkin.
Didn't see Peter, but Nutkin and his buddies abounded and we limited on the tree rats.

Chile's Braised Squirrel

3-4 Squirrels per person
I use the forelegs, hindquarters, lower back and discard the upper back & ribcage.
One (1) small onion diced
1/2 cup of flour
Spices
One (1) can, Rotel tomatos (optional)


Dredge the squirrel in flour/spices.
I use sea salt and garlic powder.
In a large skillet add just enough oil to brown the pieces.
Use whatever oil/butter you like, I like bacon grease.

Brown the squirrel on both sides with the onions.
You may want to move pieces around to cook evenly.

Lower the heat, add Rotel & quickly add enough water to just almost cover the pieces.

Bring to a slow simmer and cook covered for 1.5 hours.

Devour plain or serve over rice.

Ya mean out of all the damned invasives ya'll have, you don't have tree rats?  ::)
I bet it would work just fine with the lil'snake eaters.

Try it once, by someone who knows how to cook, you may well be surprised.
A very delicate yet pronounced nutty flavor when they've been chowing on acorns & pecans.

I've eaten Moose Stew & Bear Sauage. Many different kinds of Smoked Fish.

But NO TREE RAT

We do have Black Tree Rats running around. Tree Rats like to eat the wires in the cars here. They are Plastic Wrapped on the inside. Now that is different.

I only have experience with the CA grey squirrel.  But it you cut it up like chicken and bread it and fry it, it tastes "just like chicken".  ::)   Actually, it tastes better than chicken.  :D

Well, I really don't eat Squirrels.
I was trying to get you guys to eat them, so I would have a better chance with my vegetable garden and my fruit trees ;D.
Those rats with tails eat everything in sight. >:(

Sal a little fried squirrel with a plate of sliced tomatoes is the ticket.

Was wondering about that myself.  Don't see very many of them these days, however.

I like squirrel, but prefer Cortontail.  Mongoose are protected, but it's open season on peacock and franklin...yum!
