It takes time to de-bone and I also fillet the stomach lining off of the meat, but end result is well worth thetime. This is by far the oiliest section of an albacore tuna and as I'm canning I put a bit of belly meat in each jar. This oil is loaded with omega3 and makes the canned stuff that much better.
Here are 2 bottom half loins with belly meat still attached, then I separate from loin and cut everything in pieces keeping belly meat separate and now ready to start stuffing jars.

I pack the meat in snug so the oil inside can cover as much of the meat as possible.
Some are plain (lightly salted), some have Jalapeno, and some will get a chunk of my smoked salmon. Can't say I have a favorite flavor cause they're all #1 in my book.

very nice Ted! making me a little green w/ envy as well. home canned is not even in the same ballpark as commercial. jalapeno is my personal favorite. I miss albacore, and hope they will return to so cal again. with 80 deg or so water, it may be awhile...

I can vouch for the flavor of the version with smoked salmon added, just a nice little piece to I,part that wonderful smoky flavored goodness throughout the jar.

Those jars are pure and simple PERFECT! They fill the belly with healthy goodness, they don't need to be refrigerated, and they actually give you an energy boost.
One of my favorite things to eat, period!

Sounds like Lou is enjoying it in the same way I do, a good beer and cheese really seal the deal. 8)
