Title: Duck Fried Rice

ok, I didn't really have time to take a lot of pics for a step-by-step picture recipe..

basically started with some leftover Chinese roasted duck from the Asian market.  stripped the meat and skin off the bones and cut it into thin slices (is it julienned, or does that only apply to vegetables?)
had some leftover steamed jasmine rice in the fridge, too.

slice some onion and garlic.

scramble some eggs in the wok, flipping it to make many layers, but the final piece, make it a solid piece like an omelette, and set aside.  throw some frozen peas in the wok and cook them until soft.  set the peas aside.

sauté the onions and garlic in butter in the wok.  once the onions are carmelized, toss in the rice.  add soy sauce, sesame oil, some more butter, and oyster sauce.. break up the rice clumps with your spatula and mix so the brown color from your sauces is evenly distributed to all pf the rice...

add your eggs and peas, chopping up your egg cake, while mixing the eggs and peas and rice together, over heat so the whole thing gets warm. 

finally, add the duck and stir it up again, just to heat the duck and get the fat drippings spread in the rice.

sometimes i use shrimp, chicken, or chinese sausage as the meat,
or any combination of 2 or three of those...  sauté the shrimp in garlic better first..  then add at the end like the duck. 

if you don't have garlic, or like more garlic flavor, use garlic salt and a little less soy sauce...

sorry, i don't have measurements, i just eyeball it...  it really depends on how much rice I have to work with.

I wouldn't go to Chinatown with getting a roasted duck.  Makes me hungry just to think about it.  The skin is the best part.
