Title: Do these need assist hooks?

Want to use these for bluefin as knife jigs, 12 oz or 340 grams....should I rig assist hooks on top?  Bill

If it were me I'd put at least one assist hook one but then again I'm no big expert

The more the merrier some folks think. I would add at least one on the top like pj said. Maybe try with and with out to determine what you have confidence in . Lots of fish were caught before assist hooks became the rage ...............

Fair to say they're rigged very differently to how we would do a knife jig around here (completely different fishery, though)

I'd rig them like this:
Leader == Solid ring == Split Ring == Jig
                      ||
                      ||
                11/0 Assist Hook

When rigged like this, when you're fighting the fish you're pulling directly on the hook, not through the jig. No split rings to potentially fail, and the fish doesn't have the jig to throw around to try to get the hook out.
