Chunks of pork butt marinated in Sour Orange juice.
Then slow cooked in lard till tender, and finally flash fried for that wonderful crunchy exterior.
Well salted and served up hot and fresh.

Fried in the pan being the key last step for good Carnitas. They are so good. Yours look great!
Add Mole (pronounced: molay for those who've never had it) and you take a great dish to another level.
