Portuguese Chicken

This is one of my wife's favorite dishes...dark chicken meat (thighs work the best) and jasmine rice.....

6-10 skinless chicken thighs
2 large onions (thinly sliced)
3 large bell peppers (thinly sliced, green or red)
5 medium tomatoes (thinly sliced)
Salt, pepper, powered garlic, Dried Italian Seasoning Blend

1.   Brown chicken in olive oil, salt, pepper, and garlic powder to taste
2.   When chicken has been evenly browned on both sides, layer bell peppers on top of chicken and season with salt, pepper, powdered garlic, and dried Italian Seasoning blend.
3.   Immediately layer with sliced onions and season with salt, pepper, powdered garlic, and dried Italian Seasoning blend.  Cover and simmer until onions and bell peppers are limp, but not completely cooked.
4.   Layer sliced tomatoes on top of chicken, bell peppers, and onions, season with salt, pepper, powdered garlic, and dried Italian Seasoning blend.  Cook approx. 20 minutes until tomatoes are soft.
5.   Serve hot with cooked rice.
It may not be very productive,
but it's sure going to be interesting!
