I shoot for taking the fish off the grill when the internal temp reaches 120F; the internal temp will continue to rise for 5 minutes. 

It is amazing how fast the internal temp climbs towards the end of cooking.  It seems to creep along for a while and then suddenly blast to 120 and beyond quickly.  You have to be on your toes.
