Roasted Feral Piglet with Fresh Venison Liver & Heart

Roasted Feral Piglet
1 skinned feral piglet that'll fit your grill
Assorted spices for rub and/or a marinade

I did a simple rub of sea salt, Cajun spice and Mesquite Habenero spice mix.
Lots of olive oil.

I start on high and get a good sear on both sides.
Then switch to low heat and close the lid, one hour on each side and check temp in hams.







I also pan fried some fresh Venison Liver & Heart




Ready for the Chow Crowd

Venison Liver & Heart
Mac & Cheese
Seafood Pasta Salad
Choice of Green Salads

Wow, looks good! You only have the two kids? I'm surprised they aren't 200# each given the spreads you set out. If my folks put out food like yours I'd be 6'4" and 300# instead of the 184# I am from eating my cooking.

Actually we've three kids, the eldest is my strapping 17yr'ol son.
But he is a bit camera shy sometimes, he is on the Autism Spectrum and has his quirks.
Sometimes he will be a camera hog, but only for his Mama.

But those spreads are feeding four adults, a gluttonous teenager and two sassy midgets.
Yeah, four adults, we've a multi-generational household, our in-laws live here too.

Looks like some good eating my man.
My son Dustin has Autism and can be a real challenge at times.
It takes a lot of patience and understanding.
It can be rough, but I love him to death no matter what it takes.
It Is all part of being the best Dad you can be.
The challenges are part of it.
It takes a good woman to make it happen.

I ate 3 hours ago and I'm starving! I never thought I'd eat heart from any animal but I may have to try it... looks like steak to me.
I can hunt piglets on 42nd St., oh my bad,  those are piglet-sized rats, and I ain't gonna eat one. ;)
