Changing treble hooks to singles on jigs?

Assist hooks are very common here especially for tuna jigs.  Trebles don't allow for the penetration that you get from a big single.  All too often it seems that trebles are just "skin-hooked" and therefore subject to tearing out when the fish spins or shakes its head and the hooks torque against each other.
