Sheepshead, Four Ways

For the kids, good'ol fried fish and fries.



For the adults, iron skillet fried Lemon Pepper and Bronzed Cajun, with fries and salad.

Cajun





Special request, whole grilled, salted and basted with lots of butter.

Have you ever cooked a whole fish encased in Rock Salt in the oven?

I have not failed.  I just found 10,000 ways that won't work.

Sheepshead are mighty fine eating anyway you cook them. I would put them right up there with trigger fish but you don't have to go as far out to find them. Nice job.

Looks delicious.... Sheepshead are one of the best tasting fish.... Locally they are called poor man's lobster..... Local recipe is to cut the meat into cube sauté in butter and garlic old bay seasoning optional...

Hey Chile - what temp did you grill the fish on and for how long? Is this fish about 2lbs?

Yes and no, not rock salt, coarse Kosher salt.
Great isn't it, super moist and delicious.

Yummy!  We do big Bull Reds and Big Uglies that way too.

Grilled on High, grate temp averages 475-550'F on High, cooked for about 12-15 minutes per side.  That one was about 3.5#.
