So today counts my 49th trip around the Sun, and to celebrate I decide to smoke/grill some things I've been craving and wanting to try.

That's awesome looking and I would like your recipe for those atomic buffalo turds if you wouldn't mind.  I have a bucket of jalapeños on the vine and the wife just asked me to find a good stuffing recipe. Yours looks awesome and I got no idea what you put in them.

The big secret is that you can stuff them with anything you like, simple as some shredded cheese, cream cheese, pimento cheese or some awesome combo of anything.
I've done them with all sorts of stuff added to the filling, diced sausage/chicken, leftover pulled pork, shrimp.
I've used all sorts of chiles, Jalapenos, Anaheim, Pablano, the larger chiles work well when using meats.
And larger chiles make for entree sized servings with just 1-2 chiles.

This is my basic recipe that I start with.
These had the basics plus, an extra tsp of seasoned salt and 1T Cayenne.

1 pkg Cream Cheese, softened
8oz Cheese, shredded
.5C Onion or Green Onion, minced
.5C Bell Pepper, minced
1t Garlic, finely minced
1t Seasoned salt
Sometimes I use other herbs/spices depending on the flavors I want or other filling ingredients being used.

I had some of that leftover, froze it, later added Pulled Pork and used it to stuff Pablano and Anahiem chiles.
