Saurkraut Relish

Sauerkraut Relish      

A tasty accompaniment to any summer dish.
Ingredients
•   1 lg. can sauerkraut
•   1/4 cup minced flat leaf parsley
•   4 Tbsp. apple cider vinegar
•   3 Tbsp. olive oil
•   4 tsp. sugar
•   1/4 tsp. ground pepper

Instructions
1.   Put the sauerkraut in a colander and rinse under cold water. Drain well and squeeze to remove excess water.
2.   In a large bowl, combine sauerkraut, parsley, vinegar, oil, sugar and pepper, stirring well to combine.
3.   Cover tightly and refrigerate for at least two hours.

Notes:
Serve this on top of anything you like. It goes well with bratwurst, hot dogs and pastrami.
It may not be very productive,
but it's sure going to be interesting!
