christmas fish

with just christmas around the corner i go on an annual trip to madison county lake for rainbow trout. i like a catch a few trout take home and dress them up for the big green egg. my favorite way to fix the fish is to do a light drizzle of olive oil then to sprinkle on some raging river by the dizzy pig company. Then grill them on the big green egg with just a hint of addler wood smoke!

i'll find my pictures of when i did a massive trout cook out ive got them somewhere.
