Chile's tortilla Soup

Break out a large stock pot and add a few tablespoons of bacon grease to it.
Quarter two large onions and add to pot.
Add 2-3 large cloves of garlic.
Add one large whole Jalapeno chile, stem removed.
Brown the onions/garlic/chile.

Add one whole chicken to the pot and cover with water.
Toss in a handful of salt.
Bring to a rolling boil, and then lower to a fast simmer.
We're cooking the chicken and making a rich stock here, so simmer for at least 3-4 hrs.
Remove chicken, shred the meat and return to pot.

Add one can of corn or hominy.
Add one can of black beans.
Add one or two cans of Rotel.
Salt, cumin, cilantro, oregano and lime to taste.
Simmer to thicken.

Serve with tortilla chips and your favorite beverage.
