I knock off the heads to get the blood out
these made a huge batch of Marinated raw fish and we had some battered fillets with chips

Neighbours missed out this time as the snapper went to the city for a early family Xmas

Usually fillet mine then cover them in sea salt & brown sugar put them in the fridge overnight. Put them in the smoker & eat them with a knob of butter while their still hot. Kawhai would be my favourite fish for the smoker.
