Hardy Boy

Nice fresh ling cod that is so moist and has delicate flavour. Coat with olive oil, season with salt, pepper, garlic powder and fine chopped chives. Squish on some lemon juice just before grilling (hot hot grill) and cook until just done. Served with potato salad, sweet corn on the cob and some veggie. Very tasty, moist and sweet !!

Used the same recipe tonight for bonnethead shark, but cooked on the stovetop in a cast iron pan. Pretty much caramelized the butter and tasted delicious!

Looks awesome!

I've taken to using a ThermoPen so it's taken off the grill 10 degrees before reaching target temp.  No more overcooking.

About Beans: My Wife is Colombian and after 21+ trips over the years to Colombia, I fell in love with a bean they grow there, the Bean is called Bola it's as big as a marble and and tastes like the best Steak you ever had, The jr version that also very good is Calamanche also very good. I have not tried to buy them in the States as were there 2 times a year or one of her Family are coming over here.

I love  all beans. Some of the best soup my mom made was Lima bean soup even if she didn't boil all of the farts out of it. She put ham bones (with lots of meat) and Spanish (dried) chorizo in it. The fish looks nice and juicy. Simple is often the best way to go.

Nicely done Todd,....Ling cod is one of my all time favorites. Flaky, moist, and doesn't turn to rubber when slightly overcooked.

Nothing wrong with Lima beans, but given a choice, I may accidentally fill my belly with corn on the cob !!

Fish cooked at home should be cooked to 145F for 15 seconds minimum with a target organism being Salmonella.

This temperature will also destroy parasites in parasite containing species.

I like lima beans too.
