Maxed Out

Canning tuna every day. Day 4 today and still hardly made a dent in albacore loins in my freezer. Also taking advantage of nice weather, and smoking 2 batches of salmon today. Here's batch #1 from today. Lip smacking good

I'm canning the second of what I think will be 5 rounds from our Albacore trip as I type.

Using Wayne's Portugues recipe this round.

There are two things I don't like about fishing.  Getting up early in the morning and boats.  The rest of it is fun.

In SoCal it used to be like the swallows returning to San Juan Capistrano, around July albacore would show up in huge all you want numbers. That dried up then it was central California for albacore. Haven't seen one in years now, maybe some day?
One of the most fun fish to catch and the best tuna to eat for me anyway

Busy canning salmon and albacore. My wife would like her freezer space back, so I am obliging her. Happy wife, happy life

Also thought I'd add a pic of sunrise from 50 miles offshore on my August trip. Overall a great summer here in the PNW !!

this looks pretty yummy

Ted, do you think something similar can be made with tuna?
I still have a nice loin of fresh tuna on my freezer

Salmon is not a native fish in Mexico and I dont like the price and texture on the Salmon fillets from Costco.  :-\
so, its either Yellowtail or tuna for the smoker

I know its my Loss.

I had a friend that used to fish every year in Alaska for salmon and halibut, he normally gave me few Salmon fillets from his trips, so, I know what it taste the wild salmon Vs farm raised.
