Apple Corn Bread
Another favorite that's good on a cold morning, drizzled with honey and a cup of coffee.  I have discovered baking with corn meal takes a lot longer and baking with flour alone.  I like sweeter apples for the topping.

1 apple diced and 1 apple sliced (gala work real well for a sweet apple)
½ cup sugar
½ cup corn meal
1 ½ cups flour
½ tsp salt
2 tsp baking powder
1 egg beaten
1 cup milk
4 tblsp melted butter



1)   Slice and dice the apples toss with all the sugar and let sit to form juices
2)   Mix remaining dry ingredients, add melted butter, milk and egg
3)   Pour into 8"x10" well greased pan
4)   Pour diced apples on top first, then layer with sliced apples
5)   Bake in 425 degree oven for 35 minutes until apples are browned
6)   Other fruit can be used also like pears, peaches, etc.



It may not be very productive,
but it's sure going to be interesting!

Looks great.  I wonder if a little cinnamon would work well with it?

Most definitely, mix some more melted butter and cinnamon and pour on top of the apples...maybe a scoop of vanilla ice cream too.....hmmm getting hungry again.. :P
